It's getting cheesy in Flatiron as Beecher's Handmade Cheese prepares to open it's doors on June 24, The New York Times reports. The Seattle staple has renovated an 8,000-square-feet space between three levels in a landmarked building.
Inside, cheesemakers create their products in a glass encased room. Production is in full view of the customers who can perch on tables and stools to watch while snacking on sandwiches, salads and paninis. But perhaps the most impressive venture is the 8,000-gallon milk tank in the center of it all.
The shop's most exclusive cheese, called Flatiron, a washed-rind cheese, will be on hand in the store. Even though this unique cheese will not be offered until Labor Day, shoppers can find a preview in the basement, on your way to the 85-seat restaurant that serves Beecher's mac and cheese, among other dishes.
