Who knew Penn Station had some decent lunch options? I didn't...until a couple of weeks ago when I discovered there was a Chickpea hiding out near Amtrak. I'm skeptical of many other places in Penn Station but this is the real deal as they have locations all over NYC.
The concept is similar to Chipotle: build as you go along. You have a choice of a pita pocket, platter or salad. The next step is to choose a flavor of hummus (including roasted red pepper and jalapeno and garlic). I always pick basil and toasted pine nut. As you continue to build your lunch, add an essential item such as grilled chicken, falafel, shawarma or chicken kebab (just to name a few). Finally, add lettuce, tomato, black olives, eggs, cucumber salad, cous cous...whatever you'd like!
The last step is to enjoy the healthy and tasty lunch you created for yourself!
