Garrett Oliver is the main man at Brooklyn Brewery and there has been a lot of success in his sights. Time Out New York sat down with one of the biggest influencers in the beer industry to talk about his book, The Oxford Companion to Beer and the brewery's $6 million expansion that will build up the brewery into a small metropolis and   

The Oxford Companion to Beer can be seen as the Holy Grail for the people that love all aspects of beer. There are explanations of the different processes of beer making, the types of beers that exist like Pale Ale and IPA and the vivid history of beer. Oliver mentions, “I went digging into original documents where a guy in the early 1800s is basically saying, ‘The effect of porter on the person drinking it is largely a product of the drugs that we put into it.’ They were just pumping this stuff full of all kinds of drugs!” Oliver’s anthology of 1,100 entries gives the reader the endless possibilities of the world of beer.

In the world of beer, the emergence of craft beer is gaining momentum. In the past 25 years, craft beer has become main stream in the sense that the general public is embracing their presence. Oliver defends the accusation of Brooklyn Brewery being mainstream due to their large presence in bars and markets. In comparison to Anheuser-Busch, Brooklyn Brewery is on the micro-scale. However, Brooklyn Brewery is expanding to meet the demands of their products. Oliver also want to incorporate kitchens into the brewery so their consumers can see that they are expanding their market.
